Shallot Onion ‘Matador’ is a newer hybrid, the Matador shallot is larger than regular shallots. The bulbs have high shoulders and a rounded base, and the flesh is very crisp. This particular shallot is an excellent keeper, this a high dry matter content that aids in long-term storage.

Ready for harvesting before standard storage onions but later than most other shallots.
